A Vegan Kitchen With Kaylan Buteyn {Beet & Walnut Burgers}


Tired of food yet? The answer is 'probably not', right? I asked it the other day on instagram, but I know food is not an easy thing to tire from :) I've got the super sweet and beautiful Kaylan Buteyn of The Emerald Homestead on the blog today. She's not vegan, but she is a chicken raising vegetarian, so that's pretty cool! Also, we don't discriminate against vegetarians and meat eaters over here, we just really love our vegan recipes ;) She's sharing a healthy and tasty beet and walnut burger recipe. Hi friends! So excited to share one of our favorite meals with the readers of ohdeardrea! My toddler LOVES these beet burgers almost as much as my husband and I do and it's definitely food I feel good about him eating.

2 grated carrots
2 small or 1 large grated beet
1 small grated onion
1 cup cooked brown rice
1 cup rolled oats
1/2 cup chopped walnuts or hazelnuts
1 tsp onion powder
1 tsp garlic powder

3/4 of a 1lb package of tofu 
1/2 cup chopped walnuts or hazelnuts
1/4 cup soy sauce

1. Prep and grate the carrot, beet, onion
2. Mix grated carrot, grated beet, grated onion, brown rice, oats, first set of chopped nuts, onion powder and garlic powder in a large bowl until combined
3. In a food processor or blender process tofu, second batch of chopped nuts, and soy sauce. Add a few tablespoons of water if needed to help the mixture blend. You want this the consistency of yogurt or thick honey and it should all be well combined
4. Pour wet mixture into large bowl of dried ingredients. Gently fold with a wooden spoon or spatula until all       ingredients are wet and mixture can be formed into patties. With clean hands, patties from the mixture. My patties are typically 3 inches or so wide, about the size of a normal burger. You can leave them slightly thicker. 5. Grill or pan fry burgers. If you grill them, lay some foil down first. If you pan fry them, I suggest a non-stick flat griddle...they work perfectly on a pancake pan. If you don't have anything non stick, make sure you use a little oil to fry them in as they can be sticky. 
I put my leftover patties on a cookie sheet covered in wax paper and stick them in the freezer until they are frozen through, then throw all patties in a large ziplock bag to keep in the freezer and pull out whenever you feel like a yummy burger meal!

We serve our burgers with pepper-jack or sharp cheddar cheese and local greens like spinach or kale. At every meal I try to give Finley a variety of foods to enjoy so we often have fruit and finger food, as well as a few dedicated sides like the baked sweet potato fries and the chipotle corn dish pictured.
While we usually dine at our eat-in kitchen where Finley's booster seat is, about once a week I bring all the food into our living room and we sit around the coffee table so that we are all closer together, can let Finley still walk around and play in-between coming back to the table to eat. I like letting dinner be more interactive and playful sometimes, rather than always making it a formal affair at the table. It's my style of an indoor picnic.
John is my amazing dish washer and kitchen cleaner and I take care of all the cooking in our family. I try to make big meals three to four times a week and then we eat leftovers throughout the week for our lunches and the off-dinners when I'm not making something, or I pull out something from the freezer that I have prepared before. I often find time throughout the day to prep dinner, so that when John comes home in the evening I'm not slaving away for an hour or more at the stove. Dinner is a quick 20 minutes of final touches and then we can eat and enjoy our time together before Finley goes to sleep. Plus, prepping dinner throughout the day means Finley can often be involved. There's nothing that warms my heart more than having my kid with me in the kitchen. We've been strict vegetarians for 5 years and can't imagine ourselves not staying committed to our food choices. Eating local, primarily organic and as much homemade food as possible is something that is so important to me. Hope you all enjoy these beet burgers as much as we do!

  2. What do you do with your chickens once they stop producing eggs? I'm always interested in chicken raising vegetarians and how that works!
